We built this salad to be the energy boost you need in the middle of a hot summer day. Quick, simple, and easy to make, but delicious and packed with vitamins, proteins, and minerals. This nutritious summer salad is a marriage of sweet, refreshing blueberries and spicy, filling nutrient dense greens. The fruits and veg are tossed in a thick, sweet vinaigrette that’ll have you thinking you’re in the Tuscan hills of Italy, and topped with a creamy balance of pumpkin seeds. For finishing touches, add a light pinch of salt OR for our non-vegan friends; a handful of crumbles berry or honey goat cheese. Either way, this dish will have you full and satisfied on your hot summer day. 

It’s sweet, spicy and refreshing all at once, while also helping you clean out that red cabbage from your fridge that seems to never get finished.

Sunflower Microgreens: sunflower microgreens bring healthy fats, protein, chlorophyll, vitamins and minerals to this recipe. Additionally, these microgreens have a nutty, heavy, almost creamy flavor to the dish.

Broccoli Microgreens: These microgreens also have a nutty flavor. In dishes like these where nutty and rich flavors are prominent, we like to add in the broccoli micrgreens due to their now anti-cancer nutrients, sulforaphane.

Radish Microgreens: In this nutty, creamy dish, radish microgreens are the best way to brighten it up. The radish microgreens help tie the bright sweet flavors of the berries and dressing, in with the heaviness of the nutrient dense greens. At the same time of balancing the pallet, they also give a kick of chlorophyll, vitamins, minerals and enzymes. 

Pumpkin Seeds: these seeds are a staple to any vegan diet due to their high density in omega-3 and omega-6 fatty acids, antioxidants, and fiber. Not to mention, the creamy flavor and extra crunch is just delicious. 

Red Cabbage: on top of the immune boosts of all of the different microgreens in this dish, red cabbage is also a known immune booster. During COVID-19, this is the best salad that can be added to your diet to fight off any illnesses.

  • 1 ½ cup Sunflower Microgreens
  • ½ cup Broccoli Microgreens
  • ½ cup Radish Microgreens
  • ½ cup Spinach
  • 1 cup Blueberries
  • ½ Red Cabbage
  • 1 large Cucumber
  • ¼ cup Raw Pumpkin Seeds
  • ¼ cup Olive Oil extra virgin cold pressed
  • 3 tbsp Balsamic Vinegar
  • 2 tbsp Balsamic Glaze
  • 1 pinch Sea Salt


  • Plate spinach, microgreens, blueberries, cabbage, and seeds.
  • Put balsamic glaze, vinegar, and olive oil into separate bowl and whisk vigorously until well incorperated
  • Pour dressing over salad and add salt if desired.
  • Enjoy!


**Non-Vegan Option: for extra creaminess add 1/2 a cup of crumbled feta cheese.
